Chef Chuck's Tomato Salad

Insalata di Pomodori

This simple tomato salad consists of garden fresh tomatoes, red onions, fresh oregano and a couple of ice cubes for bread dunking goodness!! I enjoy that tomato onion flavor. This is my Mom's recipe, she makes it every summer.

Tomato Salad
4 ripe tomatoes, quartered
1 small red onion, thinly sliced
2 tablespoons fresh oregano, chopped
a splash of red wine vinegar
a healthy drizzle of olive oil
salt and pepper to taste
3 or 4 ice cubes

Core tomatoes and cut into quarters, place in a bowl, add all other ingredients gently stir and serve. Can be refrigerated and is tastier the next day.

  1. Indeed, it is: I agree!! Yum Yum Yum!

  2. Hi Sophie, Glad you like!! Thank You :)

  3. This is my absolute favorite salad once the tomatoes start coming in the garden and enjoyed w/a great Italian crusty bread for dunking.... Heaven!

  4. Hi Lucy, Hope all is well. You are right, crusty bread is a must!! Enjoy, Thank You :)

  5. Now this is the salad I grew up on. Didn't matter who's Italian home we had dinner at, this was always on the table! I can't say I appreciated the flavors back then, but its simplicity is appealing as an adult.

  6. Hi Bridgett, I believe I said this before we grew up with very similar recipes within our families, I love IT!! Thank You :)

  7. Hi Chuck, my mother makes a similar salad... everything but the vinegar. For some reason, she won't add vinegar to a tomato salad. Either way, it's a great summer salad.

  8. Hi Joe, My mother is the same, no vinegar, that splash is my touch! Yes a great salad, Thank you :)
