Homemade Lasagna


marinara sauce
homemade pasta sheets
2 cups ricotta cheese
8 ounces mozzarella cheese, grated
1 cup parmigiano cheese, grated

2 eggs
3 tablespoons fresh parsley, chopped
salt and pepper to taste


Pasta
1 1/2 cups flour
1/8 teaspoon salt
2 eggs
2 tablespoons extra virgin olive oil

Combine by hand or in a food processor then knead till smooth, wrap in plastic and let rest for 15 minutes. Divide in 4 pieces roll out enough to fit in pasta machine. Start at number 1 and continue till number 8 so the pasta sheets are thin. Cook in a large pot of boiling salted water for 2 minutes. Drain and rinse in cold water. Tip: If dough is not soft and smooth add a little more olive oil!



Lasagna

Combine ricotta, mozzarella and parmigiano, eggs, salt, pepper and parsley. In a large baking dish add a little sauce, layer pasta, then cheese mixture and top with more sauce. Continue making 3 more layers top with pasta, sauce, parmigiano and mozzarella on top. Cover with foil and bake at 350 degrees, for 40 minutes.

  12. Looks great Chuck.. I like that you don't over do the mozzarella. I think that's the biggest lasagna no-no. I've seen some that look like mozzarella is the only ingredients!

  15. I tasted this lasagne years ago at a luncheon for the teachers and the PTA at the middle school. It made such an impression on me. I took a serving home to my husband and he said he never had better lasagna and still has not, to this day. Words can not describe how fabulous this dish is!!!!
