Chef Chuck's Garbanzo Salad

Today, we were heading out for a picnic and a hike, so I decided to make this bean salad for my son. This is a very fresh and healthy salad. A simple and delicious way for a bundle of protein! enjoy.


Garbanzo Salad
2 cans organic garbanzo beans, drained
3-4 shallots, finely diced
10 kalamata olives, halved
1 tomato, quartered
1 1/2 tablespoons fresh oregano
1 tablespoon fresh lemon juice
1 tablespoon extra virgin olive oil
1/4 teaspoon sea salt
cracked black pepper to taste
parmigiano cheese, shaved
zest of 1/4 lemon

Combine all ingredients toss gently and serve.

  5. Garbanzos has to be one of my ,most favorite beans. To me it seems to be thee most versatile of all beans. And if you have not checked out my hummus recipe, my oh my, then you are missing something.

    I learned from a bunch of Arab women. Who better to learn from then Arabs?

  12. Ciao Chuck! Yum! Perfetto! I just happen to have a couple of cans of chickpeas sitting around. Just this morning I was thinking it's a bit past time for pasta con cece, which is one of my favorites but always seems better in the fall and winter.
